Tasting Notes
Vineyard : Exposed east/south, the parcel provides favourable to good ripeness. The clay-limestone marl and Kimmeridgian soils are very present. In this environment of stones and sedimentary shells, the roots will eventually find their way to settle in depth. There, they will draw on the evolutionary minerals of the Kimmeridgian. The finesse and minerality will then be expressed in the pure Chablisien spirit.
Estate Tasting note : Brilliant colour with beautiful green highlights. Pronounced nose of fruits and flowers with a nice freshness and some mineral touches. Lively attack. Good length, with fruity and acidulous flavours. The Vaillons terroir produces straightforward and well-crafted wines.
Food Pairings
Serve with grilled Lobster or whitefish with a butter sauce

Burghound Review : 50% from Les Lys with the remainder equally split between Châtains and Séchets. A cooler and not quite as ripe nose offers up notes of white flower, pepper, lemon rind and enough typicity to be interesting. There is fine volume and even better detail to the middle weight flavors that flash plenty of minerality on the markedly dry but not austere finale. This is lovely and while it could be enjoyed young, it should also be capable of rewarding several years of cellaring. Score: 91 – Outstanding
