Tasting Notes
The name “La Source” (the stream in French) and the image of a river fish on the label point to the esthetic and practice of the estate, which strives to reflect the natural environment from which the wines have evolved, as well as addressing the ecologically sustainable principles which guide their endeavor.
La Source comes from vineyards planted on volcanic soils, mixed with glacial and fluvial soils, adding minerality and complexity to the wine. In addition, the warmer Languedoc climate gives this wine a softer expression of Sauvignon Blanc; not pungent and grassy as found in cooler appellations.
It shows lifted notes of elderflower, green lime zest, and boxwood. The palate is ripe, offering zesty ripe citrus flavors coupled with an edge of flinty minerality and asparagus keeping things framed and focused. Sur-lies aging gives balancing flesh and creaminess to the wine’s crisp refreshing acidity.
