La Togata

Elusively Montalcino:

La Togata is a small family-run winery, with vineyards in the south-west of Montalcino and wine cellars in Sant’ Angelo in Colle. The property is own and run by the three sisters of the Angel family along with their mother, Jeanneth. Together, they practice meticulous vineyard management and low intervention winemaking: every stage of the production, from the choice of natural products in the vineyards to the hand pruning and grape selection, is precisely managed. The harvested grapes are brought to a stone cellar that was recently renovated with modern wine making technology. The wines are then matured for different periods in either 80 Hl Slovenian oak barrels or French oak barriques, and further aged in their bottles for 12 months before release.

    Montalcino is starting to resemble a desert. So says Eric Guido in Vinous. This shifting climate reality has set the stage wherein, for some vintages, minimum Brunello aging requirements can be excessive given the nature of the berries and juice extracted. Rosso di Montalcino, given it less restrictive requirements, offers winemakers an option to balance the wine produced relative to the vintage character.
