Penley Estate’s Phoenix Cabernet Sauvignon is a vibrant expression of Coonawarra’s renowned terra rossa soils. Crafted with a modern, fruit-forward approach, it showcases ripe dark fruits like blackberry and plum, complemented by notes of anise, fresh thyme, and subtle floral hints.

On the palate, the wine is medium-bodied with a juicy core of ripe fruit flavors. Integrated French oak notes complement the seamless, powdery tannins, leading to a long, satisfying finish.

The 2021 vintage spent 12 months maturing in a combination of vessels—65% seasoned French oak, 5% new French oak, and 30% stainless steel—resulting in a supple, fresh, and vibrant wine.

Food Pairings

Grilled lamb chops, beef tenderloin or ribeye steak, aged cheeses (cheddar, gouda, gruyère) or pecorino. Vegetarian Options include mushroom risotto with thyme and parmigiano or lentil and eggplant stew or ratatouille, particularly with smoky paprika or herb seasoning.
