This terroir is a perfect match for the aromatic varietal — the cooler climate and stony soil structure help maintain a lean, yet vibrant Riesling. After careful selection in the vineyard and gentle crushing, the juice remains on the skins for 24 hours. After gentle pressing, fermentation begins spontaneously in stainless steel tanks.
