Tasting Notes
Plenty of detail goes into the evolution of this wine. The vineyards for this wine are sustainably farmed with cover crops in the vine rows. The grapes are sourced from 15 different vineyards, bringing varying elevation and soil types to the equation. Fermentation is spontaneous, to emphasize terroir. In terms of maturing and finishing the wine in oak, 22 different coopers are used to add complexity to final product. Legaris has used a 50/50 split of French and American oak.
Very intense dark-cherry red with purple hues. Very ripe red fruit on the nose, well-integrated with toasty and balsamic notes from barrel ageing. Big balanced, intense and elegant in the mouth, with a long aftertaste.
Food Pairings
Castile piglet, stews, meat casseroles and semi-cured cheeses.

A pretty, juicy red with lots of blackberry, chocolate and walnut character. It’s full-bodied and layered with chewy tannins and a flavorful finish. Needs time to soften. Better after 2021. James Suckling – 91 Points
