Tasting Notes
Winemaker Chris Thomas (C.T.) selected his favourite barrels to produce this elegant Shiraz. Fruit is a blend of the two estate terroirs of Dowie Doole; the sandy soils of Blewitt Springs and the ancient rocks of Tatachilla. This Shiraz is matured for 24 months in second year or older French (80%) & American (20%) hogshead oak barrels.
Unmistakable McLaren Vale Shiraz bouquet – dark red fruits, cloves, cassis – with lovely French oak notes of cedar and star anise further lifting the fruit out of the glass. The palate is rich and full with layers of dark fruits, violets and dark chocolate. The mouth-feel is refined and long, with the elegant tannin from the cooler Blewitt Springs Vineyard giving the wine great length. The oak maturation has added complexity while maintaining a graceful balance between the fruit and oak flavours.
Food Pairings
Whole beef fillet, Tomahawk Steak
Third Party Reviews
“Matured in French and American oak for 24 months. It’s a familiar flavour profile with toast, coffee and cream characters flowing over black cherry-plum fruit. There’s a softness to the texture and a burst of refreshing acidity to the finish; in between there’s a good deal of oak and just enough fruit.” – 91 Points (highly recommended) Campbell Mattinson, The Halliday Wine Companion
