Tasting Notes

Silex is a selection of Villaudiere’s oldest vines planted on clay-flint hillsides of Ménétréol-sous-Sancerre and Sancerre. This area has rare silex soils with a higher proportion of flint which continues into the communes of Pouilly Fumé. Grown sustainably without herbicides, this rare terroir gives a classic Sauvignon Blanc remarkable ageing potential.

Clear pale-yellow hue, with fresh and intense aromatic profile exhibiting floral and mineral notes, citrus fruit and a touch of flint. . ‘Silex’ is concentrated, balanced and lively on the palate, giving a lovely sensation of freshness. This wine has remarkable charisma, purity and age-worthiness.

Food Pairings

Goes well with shellfish, lobster à l’Armoricaine, or trout with almonds.
