Unlike most from the region, Aldo believes his wines are better if held for one year in bottle prior to release. La Monacesca has a medium lemon yellow color with brilliant green reflections. The nose is delicate with white peach, orange peel and honey. The palate is rich and honeyed with white pepper and zesty lemon acidity and a medium plus finish.

Made from 100% Cabernet Franc. Salmon coloured, clean and bright, with a pleasing nose of raspberry, strawberry and dried herbs. Light to medium-body with a dry, lingering finish.

Made exclusively from Cabernet Franc, the 2012 Rosato opens with a light raspberry color and delivers sweet aromas of forest berry and fresh raspberry with a pungent touch of almond paste at the back. Tasting Notes
With a southerly exposure, this 3.22 hectare vineyard is a mix of clay and lime. Oak barrels are used in fermentation bringing about soft and subtle tannins. The “Cellier aux Moines” parcel is very old with records dating back to 1258. With a terrific currant color, and a rich, intense fruit bouquet with aromas of ripe dark berries, this Pinot Noir has lots of sweet, pure fruit on the palate. It is a beautifully balanced, velvety wine that offers good power, backend persistence and a lingering finish. This is a wine that can be enjoyed after a long aging period.
